Cook's South African Roast with Chimichurri

Good for: 6 servings
Prep Time: 10 minutes
Cooking Time: 38 minutes 

INGREDIENTS: 

Main: 

    • 1 pack (defrosted) – Cook’s Flavor Origins South African Roast  
    • 3 tbsp – Olive Oil  

 

Sauce: 

    • ¼ cup – Parsley   
    • ¼ cup – Cilantro  
    • 1 tbsp – Garlic  
    • 2 tbsp – Red Wine Vinegar 
    • 1 tbsp – Lemon Juice 
    • 5 tbsp – Olive Oil  
    • 1 tsp – Chili Flakes  
    • 1 tsp – Salt  
    • 1 tsp – Pepper 

Side: 

    • Finger Chilis 

INSTRUCTIONS:

    1. Heat oil in a pan. Pan sear Cook’s Flavor Origins South African Roast for 4 minutes on both sides, for a total of 8 minutes over medium-high heat. Then place in a 450 preheated oven for 30 minutes, or until the chicken’s internal temperature reaches 165. 
    2. For the sauce, combine all ingredients together and stir well. 
    3. Season finger chilis with salt and pepper and toss in olive oil. Grill for 5 minutes or until charred.
    4. Enjoy! 
Cook's Roast Chicken Bruschetta

Good for: 3 servings
Prep Time: 10 minutes
Cooking Time: 12 minutes 

INGREDIENTS:

Chicken Flakes:

    • 2 pcs – Cook’s Flavor Origins Cook’s French Roast 

Bruschetta:

    • 9 pcs – Baguette, sliced 
    • 2 tbsp – Olive Oil 
    • 1 tsp – Salt 
    • 1 tsp – Pepper 

Salsa: 

    • ¼ cup Tomatoes, diced
    • ¼ cup Onions, diced 
    • 1 tsp – Lemon  
    • 2 tbsp – Olive oil  
    • 1 tbsp – Parsley  
    • 1 tsp – Salt   
    • 1 tsp – Pepper  

INSTRUCTIONS:

Chicken Flakes:

    1. Heat oil in a pan.
    2. Sear Cook’s French Roast for 3- 4 minutes each side (or until internal temp reaches 165 ).
    3. Leave it aside to cool, then flake off meat from the bone. 

Bruschetta:

    1. Drizzle olive oil on the baguette.
    2. Season with salt and pepper.
    3. Grill for 1-2 minutes on each side (or until grill marks appear). 

Salsa:

    1. Toss together tomatoes, onions, lemon juice, and olive oil.
    2. Adjust flavor with salt and pepper. 

Plating: 

    1. Place chicken flakes over baguette, then top with salsa.
    2. Enjoy! 
Cook's Mediterranean Chicken Pizza

Good for: 2 servings
Prep Time: 12 minutes
Cooking Time: 22 minutes 

INGREDIENTS:

    • 1 quarter leg – Cook’s Flavor Origins Mediterranean Roast
    • 1 tbsp – Olive oil 
    • 1 pc – Pizza crust (10 inches) 
    • 4 tbsp – BBQ sauce 
    • ½ cup – Mozzarella cheese 
    • 10 pc – Onion rings 

INSTRUCTIONS:

    1. Coat Cook’s Flavor Origins Mediterranean Roast with olive oil. Fry for 6 minutes on each side.
    2. Place in a 450 preheated oven for another 10 minutes or until internal temp reaches 165.
    3. Let it cool before flaking the chicken meat and set aside (yields 250g).
    4. Top BBQ sauce, cheese, onion rings, and Mediterranean Roast onto the pizza crust.
    5. Store it in a zip-lock bag and pop it in the oven before serving.

Cook's South African Paella Rice

Cook's Flavor Origins Recipe for South African Chicken Paella Rice

 

Good for: 8 servings
Prep Time: 20 minutes
Cooking Time: 1 hour 

 

INGREDIENTS:

Pan-fried Chicken: 

    • 1 pack – Cook’s South African Roast 

 

Paella Mix: 

    • 3 tbsp – Olive Oil 
    • 3 tbsp – Chorizo, small & diced 
    • 1 tbsp – Garlic, chopped 
    • 1 tbsp – Onions, chopped 
    • ½ tsp – Paprika 
    • ¾ cup – Tomatoes, canned & diced 
    • 1 pc – Chicken Cube 

 

Paella Rice: 

    • 1 cup – Japanese Rice 
    • 500 mL – Water 

 

Garnish: 

    • 1 tsp – Parsley 

 

INSTRUCTIONS:

Pan-fried Chicken: 

    1. Heat olive oil in a pan.
    2. Pan sear Cook’s South African Roast for 5 minutes on each side.
    3. Place in a preheated oven at 400°F for 20 minutes or until the chicken’s internal temperature reaches 165°F. 

 

Paella Mix: 

    1. Heat olive oil in a cast iron pan, sauté chorizo for 1 minute, then set aside.
    2. Sauté garlic and onions over medium heat.
    3. Add paprika and diced tomatoes, then cook for 30 seconds.
    4. Add in chicken cubes.
    5. Sauté for 5 minutes, stirring constantly. 

 

Paella Rice: 

    1. Add Japanese rice to the mix and sauté for 2 minutes, stirring constantly.
    2. Add in half of the water, simmer over medium heat for 5-8 minutes or until the liquid is almost dry. Stir occasionally.
    3. Add the remaining water. Cover with foil and let it simmer for 5-8 minutes or until rice is cooked. 
    4. Enjoy!

 

Plating: 

    1. Place South African Roast over rice.
    2. Garnish with parsley.
    3. Enjoy your South African Paella Rice!
